Win Defender alert
Hello,
I use MPC-HC, and I always keep it up to date. Every week.
Yesterday, I wanted to check out if there was an update, so I opened MPC-HC, option "check updates" but the webpage wasn't secured. So I thought that there was something going on with the website, and decided to wait.
This morning, I checked again the update. There is one : "K-Lite Codec Pack 16.2.4 Update" So I downloaded it and clicked on it. I got a warning from Windows Defender : unrecognised application" First time I get this warning. The SHA-256 is correct.
Is there something missing from this update? Or no risk at all?

The unrecognized application warning can happen when you download it shortly after the file was published. A certain number of downloads is required for it to build "reputation" and become recognized by Defender. That usually takes a few hours or a day at most.
When in doubt about any download on any website, just use http://www.virustotal.com
That also shows the file hash in the details.
The website error yesterday was because the SSL certificate had expired. It wasn't automatically updated by the server due to an error. That has been fixed.

No, those are false positives. It is really annoying that VirusTotal uses some very poor quality scanners. For example Bkav gives a lot of wrong detections on new files.
You can also use these installers instead:

Those are complete installers with the update included. They don't have any (false positive) detections.

I downloaded the full installer and I launched it. There was again that warning from Denfender but since you've explained why it happens, I didn't bother.
