how do i pin a specific sub

mkv, 13 ep series, with 3 embedded sub,

i want to pin the 2nd sub to be selected automatically,

how do i do this?

Do the subtitles have different languages? The codec pack has options to configure preferred languages.

If they have same language then the only way is to modify the file to set the second subtitle as "default" track. You can do that with MkvToolNix program.

1st is subtitle sign/songs [eng](ass)[default]
2nd is subtitle [eng](ass)

how do i select the 2nd everytime.

You need to change the default track in those files.
